Summer is back and hot as ever. Who in their right minds want to cook anything, especially on days when it is 100 degrees out, unless you are outside barbecuing that is. Have you been searching for summer foods that do not require cooking? Well here it is folks. I am going to let you in on some meals you can make on those unbearably hot days so you do not have to step foot near that hot oven.
- Tuna and vegetable pitas. All you need for this is tuna fish, mayonnaise, cut up lettuce and cut tomatoes. Mix the tuna and mayonnaise up how ever you like it then cut the pita and stuff it with the cut tomato, lettuce and a scoop of tuna.
- Peanut butter and jelly wraps. You will need cream cheese, peanut butter of your choice, any flavor jelly and tortillas. Mix cream cheese and peanut butter in a bowl until they are soft, and then spread over half of the tortilla, now you can spread the jelly on top and roll up the tortilla. Now eat
- Salads make for a nice cool meal and fill you up. You can add lunch meat and cheese for a chef salad.
- Finger sandwiches always make for a good summer meal

- Mahamara-4 medium red bell peppers chopped up into pieces, 1/2 Spanish onion cut up, 2 cups raw walnuts, 1/3 cup pomegranate molasses, 2/3 cup unseasoned bread crumbs, 4 tablespoons extra virgin olive oil1/2 tablespoon ground cumin seed, 1teaspoon ground allspice, 1/4 teaspoon ground coriander seed.Blend peppers and onions in a food processor until they are ground to a smooth consistency, straining and reserving any liquid. Set aside. Pulse the walnuts in the same processor until they are coarsely chopped (not big pieces, but not a paste). In a bowl, fold the bell pepper, onion, walnuts, pomegranate molasses, breadcrumbs, oil and spices together until thoroughly mixed, adding some of the reserved liquid if necessary to achieve desired consistency. Refrigerate for half an hour to cool, and garnish with a drizzle of the molasses and some walnut halves. Serve with soft pita or toasted pita chips and fresh vegetables.
- Cucumber Tubes-1 medium cucumber, 1 teaspoon finely chopped parsley, 1/4 teaspoon chopped basil, 1/2 teaspoon chives, 3/4 cup cottage cheese.Cut cucumber in half lengthwise. Hollow the center of each cucumber half by scooping out seeds with a spoon or vegetable knife. Stir finely chopped herbs into cottage cheese, then arrange in hollowed cucumbers.
There are a few things that you can try for you and your family on those nasty hot days where no one wants to be near an oven to cook a meal. Plus some of these may be new meals that you will want to experiment with so enjoy and stay cool.
